I just totally scolded a chef for talking about his plans for fall dishes. Dude, summer is not over yet!

But sadly, he's not alone. A lot of chefs and mixologists are in the throes of menu planning for autumn dishes and drinks while we're still enjoying the best summer has to offer.

While Sable Kitchen & Bar's head mixologist Mike Ryan is probably also forging ahead with next season's sippers, he's just unveiled several market-fresh delights to wind down the summer.

Our faves by far:

Clockwork Cocktail: Ryan compares this to a classic Gimlet, but his version is made with Bols Genever, house-made lime cordial, muddled strawberries and topped with La Marca Prosecco.

Cuzco Club: This updated cocktail takes a cue from the Clover Club, and comes with Barsol Pisco brandy, raspberry syrup, lime, egg white and Peychaud's.

Power Line: Certain to cool you off, Ryan says that the wood notes from the bourbon complement the spice of the ginger. It's made with Bulleit Bourbon, peach-ginger syrup, lemon juice and mint.

Silent Partner: After a few of these, you're certain to be more than silent! Created with Milagro Blanco tequila, house-made orgeat and the very rare Palo Cortado sherry.

All drinks are $13.
